On May 28th we had the pleasure of hosting a lecture evening about Japanese kitchen knives in collaboration with Dansk-Japansk Selskab.
The lecture was given by Steffen Bach, who has worked as a chef at some of the world’s best restaurants before deciding to dive deeper into the world of Japanese kitchen knives. His journey first began as an importer, before he later moved to Sakai, Osaka, where he spent four years learning the craft under Master Keiichi Fujii and Tower Knives. Steffen is one of only three non-Japanese people in the world to have completed the Japanese knife-making apprenticeship. Today, he has brought the craft back to Denmark, where he produces knives according to Japanese craftsmanship and traditions at his company, Suba Knives, located in Frederiksberg. During the lecture, Steffen shared his passion for Japanese knives, the traditions behind the craft, and his own personal journey from chef to knife maker. He also spoke about the importance of guiding customers and helping them find the right knife, offering the kind of advice that he himself missed when he was a young chef.
